Strong electric fields can induce unwanted noise or disturbances in sensitive analog circuits, resulting in erroneous sensor outputs.
Here are some suggestions to mitigate this effect:
Surround the sensor and associated circuitry with a conductive enclosure or shield. Make sure the shield is properly grounded to prevent electric fields from penetrating and affecting the sensor.
Ensure that the sensor and the surrounding electronics have a good ground connection. Keep the signal traces as short as possible. Use ground planes to provide shielding and better grounding.
Place decoupling capacitors near the power supply pins of the sensor to stabilize the power and reduce noise sensitivity.
Unfortunately it is difficult to diagnose without more data, but I believe that implementing some of these suggestions can help mitigate the effects of EMI and stabilize the sensor output under electric field exposure.
