how can I read/write to in-build eeprom on LPC1347? Does the simplest way exist?

This is only way? If I understood correctly, in-built EEPROM is a part of flash memory in MCU?

You use IAP commands 61 (write) and 62 (read). See chapter 21 in the 1347 datasheet (UM10524).
