We have MIMXRT1051CVL5B on our design.
Can I know if anything may be damaged or not function well if the VDD_USB_CAP pin will float (and not connected to capacitor)

Only if your design does not requiere to use the i.MX RT1051's USB peripheral, you can leave the VDD_SUB_CAP pin floating. Otherwise it will need the capacitor connected.
