I'm planning to use S32V234 and boot from eMMC. However, which interface or interfaces can I use to program the eMMC? Is it JTAG or some other interface?

One of the methods can be loading via network.
Please follow the steps described in Section 3.1.2 Setup eMMC memory of Linux BSP Reference manual for detailed instructions.
