The S32K motor control kits could be found on the web page http://nxp.com/AutoMCDevkits or directly Arm-based kits at http://nxp.com/S32KDevKits
Currently, the Single-shunt example software contains SW packages for MCSPTE1AK116, MCSPTE1AK144 kits, and MCSXTE2BK142 evaluation board. Look for "1Sh" in the project folder name.
Unfortunately, the Single-shunt example software for S32K3 is still in progress.
The same is valid for application notes for this version of the software example code - they are not publicly available yet. However, you may look at AN5327: 3-phase Sensorless Single-Shunt Current-Sensing PMSM Motor Control Kit with MagniV MC9S12ZVM. The current sensing and reconstruction technique is described in chapter 3.3.2 Phase currents reconstruction.
It is for different MCU, but the principle is the same.
