I am using the NXP antenna design tool in order to obtain parameters for an antenna for the NTAG Boost. I was curious as to why the default Receiver Resonance Frequency was 14.84 MHz as opposed to 13.56 MHz.

The NTAG5 Boost uses "Active Load Modulation", so there is a receiver (LArx, LBrx) path and transmitter path (LAtx, LBtx). It might be quite tricky to tune them exactly at 13.56 MHz. So we recommended keeping the "receiver" path resonance around 14 MHz and the transmitter up to 16 MHz.
