Is there a guide for getting started with Embedded Swift on i.MX RT EVKs like the i.MX RT595 or i.MX RT700 evaluation kits? If there isn't where would be the best place to submit a feature request for this?

As we discussed earlier, NXP does not provide any official resources of this kind. I’ve reviewed the third-party resources again, and it seems this project might be helpful to you; they used the RT1052/1060 for development and demonstration:
