I am looking at the S32K344 evaluation board schematic and board and I don't understand where the v11 is coming from, it appears to only be connected to V11 pins on the MCU and nothing else
Am I misunderstanding this and I do not need to supply 2.5V and 1.1V to the board and that I just need capacitors on these pins?
I had missed seeing this, do I understand correctly I only need to supply 1.5V as well as 5V for VDD_HV_A and B, and VREFH?
Additionally, I do not understand how you set the voltage levels such as VCore on the FS26 to power v15. Is this information within the full datasheet in the secure access files?

Yes, you understand that very well: you don’t need to supply V11 and V25 pins externally, only decoupling capacitors need to be connected.
Yes, you need to supply 1.5V as well as 5V for VDD_HV_A and B, and VREFH.
This information can be found in S32K3xx MCU Family Data Sheet (e.g. Figure 20), as well as in S32K3xx MCU Family - Reference Manual (e.g. Figure 165). But the best reference for supply management would be S32K3 MCUs for General Purpose – Hardware Design Package where all possible supply embodiments are listed. None of these documents are in Secure section.
