Is there some trick to enable "non-stop mode" with Segger Jlink Plus.

There is no trick - SEGGER's gdbserver is not compatible with gdb non-stop mode. Hence the IDE doesn't offer the option for SEGGER connections as it does when selecting a LinkServer debug connection.
