The LPCXpresso Getting Started is available in PDF form from:

http://ics.nxp.com/support/documents/microcontrollers/pdf/lpcxpresso.getting.started.pdf

[a version can also be found in the install directory of lpcxpresso].

I am afraid that this is the only PDF based documentation on the IDE.  General information on the workbench and on the gnu build tools can be found via the IDE menu...
