ARM Cortex is not as difficult as it seems to be at first glance. But having a lot, and mix-up, of options for tool-chains, vendors, standards (CMSIS), programmers, etc, makes the picture obscure.
However, the guys from ARM took into consideration your desires (to make the life easier with 32 bit core controllers), that's the reason Cortex-M0 family to exist. This family is not only the easiest, but also is the natural replacement for 8 and 16 bit application replacement.
Maybe you should start with a member of this family. NXP offers a LPCEXPRESSO board, IDE and tool-chain for the LPC1114 uC (at very affordable price).

However, I think NXP should make a transition tutorial for old 8-bit programmers, like a dumbed-down version for 32-bit programmers. Something like that would have made my life so much easier.
