Can LPC-Link work with IAR Embedded Workbench?

No. With LPC-Link you cannot load any other firmware.

That is why we have now produced LPC-Link2.

Is it possible to change the firmware in LPC-Link to make it act as CMSIS-DAP (ARM standard debug protocol) instead, or maybe even J-link?

LPC-Link cannot be used with IAR. But LPC-Link2 CAN be used with IAR.
