Is it possible to get an example for HID Bootloader for the LPC55. Ideally I would like to use the HS USB port to achieve this.

Unfortunately, there is no example for HID Bootloader for the LPC55sxx. You can check the application note AN12327 "Firmware Update Using Secondary Bootloader".
