I'm using a LPC4337 microprocessor and during power-up I am seeing an in-rush current around 2 amps for about 300us before settling.

Is this typical with this processor? Is there datasheet available that covers this?

In rush depends quite a bit upon the size and quantity of regulating and decoupling capacitors on your board.
it also depends upon external peripheral components, which should have a shutoff or enable since they will have to be shutdown to reach suspend current levels.
And they should be shutoff during power up and then enabled once the firmware starts running.
