I want wo build a specifik SDK 2.0 for a K61 processor. Unfortunately, there is no selection for this sub-family. Can I chosse another one which is fully compatibel?

I have checked the http://www.nxp.com/ksdk, we have the SDK for K60/K63/K64/K65/K66, I suggest you use K60 SDK, because K60 and K61 are similar.
