Is there any sample code / libraries with regard to the ntp 5312 to enable GPIO Pin or any other functionality ?

Hope you are doing well. I would recommend checking this Application Note: NTAG 5 - Use of PWM, GPIO and event detection.

On section 3, you can find the GPIO registers, and configuration examples.

Also, you may be interested in NTAG 5 - Firmware development for KW41Z. It is an Application Note focused on MCU side (KW41), and also has some GPIO use case.
