Hello,
I have purchased a JN5168-001-M00Z module, and a would like to make a breakout board (breadboard friendly) in order to try this module.
I would like to know if you have the associated Eagle library (symbol and footprint) for this module.
Also, I would like to know if it is possible to use the LPC Link2 JTAG prog to debug it. If not, is there a cheap debug prog ? (I'm a hobbyist)

You could find the footprint that you are looking for.
Unfortunately, the LPC Link2 JTAG can not debug the JN5169 because it is a RISC 32 bits MCU, the LPC has not any information about the registers. I could recommend using the terminal to debug your application.
