does the S32k series of micros specifically the 388 have parallel processing?

Thank you so much for your interest in our products and for using our community.

S32K1 derivatives just have a single core, so they cannot perform parallel processing.

Regarding S32K3 derivatives, you can consult Core quantity feature in Table 5. S32K3xx chip's feature comparison of datasheet (Rev. 9).

There you can see that S32K388 have 1xM7 LS + 3xM7 or 2xM7 LS + 1xM7 ("LS" means Lockstep core).

Additionally you can refer to Figure 10. Block diagram – S32K388, where you can see that
Core 2 is Permanent Lock-Step, but Cores 0 and 1 can be decoupled:
