We do not have a proper MCAL training, however, you can find documentation on each module on their respective installation directory, for example for the Dio module C:\NXP\S32DS.3.6.1_2\S32DS.3.6.1\S32DS\software\PlatformSDK_S32ZE\RTD\Dio_TS_T31D53M20I0R0\doc, there you can find the User Manual, RTD_DIO_UM.pdf, where you can see descriptions of the configuration, for example:

If you need help with an specific module configuration you can post a new question in the respective community, NXP-Forums, if you do so, please specify the exact part number, RTD version, S32DS version and any other relevant sw you are using.
You can also check the examples available after installing the RTD for your component, the examples with "Ip" in the names are for "normal" drivers, while the ones without it, are for the MCAL drivers, for example:
