Simplest Passive NFC sensor: transmit poti value

HI

I am quite new to NFC an usually just use Arduino like systems. 

I've seen and tried battery free NFC demo patches, this is very close to what I need.

All I want to do is make a very small passive/battery free circuit to measure a variable resistor (poti) and transmit the value as NFC data + a serial nr, ideally without needing a special App, just readable with a regular NFC tag apps. 

What would I all need to make this? or can someone help me?

Please let me know if have already checked our Connected NFC Tags. These are tags that can harvest energy from the NFC Field and communicate with other MCUs or sensors for acquiring data and retransmitting it back to the NFC Reader.

yes i saw these.

just how simple is it to program them and what other components are required? 

I would like to get as close as possible to the real thing, not a demo board. so get a chip and make a PCB. but how do you program it ? I suppose you need more components ?
