Multiple Simulink Configuration Sets possible?

Hello,
we are currently evaluating the
i.MX RT1024 for use in a future product. For this purpose we use the evaluation kit in conjunction with MATLAB/Simulink.
So far, the experience was positive overall.
However we are looking at how to manage multiple model configurations for the hardware. The "Quick Start Guide For How To Create A New Project" states in step 4 that the model settings get saved in files and folders named <model_name>Config.mex and <model_name>Config.
Usually in Simulink we store multiple configuration sets for different purposes using the Model Data Editor (e. g. one for debugging and one for release). This naming scheme however seems to make it impossible to store multiple configurations without overwriting existing ones.
So the questions are

1. Is it really not possible with the toolbox to store multiple independent model/hardware confgurations?

2. If we misunderstand the correct usage: What is the correct way to utilize multiple configurations?

P. S.: I had previously reached out to NXP support regarding this issue. However, I was advised to repost my query here.
