I am attempting to get a hd44780 based display working with a MPC5604B based development board and would appreciate any examples/library's anyone could offer to help me in this.
I am not aware of any example/library directly for MPC5xxx. But you can find several examples/drivers for other MCUs here in Community. You can refer to them and try to port a driver to your MPC5604B.
