The "900-75115" is not NXP partnumber, correct NXP partnumber should be like this: CWH-UTP-PPCC-HE
The marking "COP" means this is JTAG/COP version of USP tap, it can be used for PowerPC targets (except MPC8xx).
To answer your question - yes, "COP" version of USB TAP supports MPC83xx family processors, including MPC8378, for debugging and flash programming. Note - this debug probe should be used along with CodeWarrior software, for MPC83xx family you should use this version:
