I need it to know how to initialize the Interrupt Vector Table, timer and the ADC.

You can use the samples code for the TWR-S08PT60 , the S08PA family is almost the same , only the PA does not have the TSI module, you can find the lab code on the following link
Please also check the TWR‐S08PT60 Lab Guide
the lab 2 use the ADC
Please let me know if you need any specific sample code
