You need to try to build one of those demos using the code generated by the configuration tool. Walk through it as I have. You will find that the code pulled in by the config tool preclude the uses you claim they can. You are clearly unfamiliar with the config tool code.
If the configuration tool is not able to provide for these common scenarios, your team needs to revise the tool, not tell your customers that it's useless.
The older Kinetis tools were much more useful. As are the ST Micro CubeMX. NXP needs to step up it's game.

you can try the sai demo app, or one of the USB audio apps. They all have the same underlying driver code.
