I'm starting to develop a new software application for NXP S32K144 and I must choose which SDK can I use.
Which is the diferrence between SDK S32K RTM (release to manufacturing) versus EAR (early access release) quality level in terms of features? Are there any documents that describes these features?
Is there any link where I can get this information?

In general, EAR version is not determined for developing application used in production. It is some kind of testing version which should detect bugs and any other potential problems.
If you want to develop new application, I recommend use S32SDK_S32K1xx_RTM_3.0.0, which is the newest RTM version. If you have installed S32 Design Studio with newest update 9, you can see all SDKs in S32DS installation folder.
In these folders, you can find release notes for all versions, please see the figure below:
Please see the link below to download update 9, which contains latest versions of SDK.
