If a watchdog reset on SWT1 happens, will it reset the whole processor? If it does is there a way to just reset a single core instead of all three of the processors.

Yes it will reset whole processor.
No, there no way to reset only one core as there is single reset unit. So any kind of reset applies to all cores.
