It looks like Freescale currently have the "Data Sheet" with the hardware-specific information and the "Reference Manual" with the software-related information.
The old Motorola manuals from the 1990's didn't seem to make that distinction. I think you'll find what you're looking for in "10.5 DC Electrical Specifications" of the 1998 version of the "Archived 2005 - MC68360 Quad Integrated Communication Controller User's Manual". It has rows in the tables with "3.3V Part Only" on them.
