Does the K64 Signal Multiplexing & Pin Assignments Table exist someplace in an Excel format that I can use in my design documentation without having to recreate it?

I was expecting that someone would have created such a document, but in case it turns out that no one has I have attached the K60 (with K64) port simulation file from the uTasker project which contains the pinout and functions in an array - not exactly EXCEL but almost comma seperated so may be easier to embed if needed.

We don't have the excel format, we just have the table in the reference manual and datasheet, if you want to use it in your own document, you need to refer to the reference manual(chapter 10.3.1 K64 Signal Multiplexing and Pin Assignments) and recreate it by yourself.
