The GoldVIP target image does not include any package management tool by default. The Software-Content-Register (SCR) file that is included in the GoldVIP release would be the best choice to get an overall picture of what packages are included in the image (check the subcomponents list for the "Linux BSP" entry). Note that this is a list with all the packages that are installed in all the domains (both dom0 and v2xdomu), while each VM has a specific set of packages installed.
You can install or remove packages by building a custom image starting from the GoldVIP meta layer (please check the 19th chapter from the GoldVIP User Manual for steps on how to set up the yocto workspace). Also, you will be able to check the list of installed packages by checking the manifest files generated by bitbake (i.e., the content of <yocto_workspace_path>/build_s32g274ardb2/tmp/deploy/images/s32g274ardb2/fsl-image-goldvip-s32g274ardb2.manifest).
