Does anyone know if there is a document that contains the definition and operation of these DB, FCB, DW, or FDB pseudo-ops??

Are you referring to Codewarrior?

If so, then FCB and FDB are listed as synonyms for Codewarriors native DC.B and DC.W in the Assemble_HC08 document in the help directory.

There appears to be more of these synonyms than are actually list in the manual.
