We're interested in using the NT3H1101/1201 ICs for wireless communication and power. The datasheet states that there is energy harvesting capability, but there isn't much detail. Where can I find out more about the energy harvesting? How to implement it? How does it work? Can communications and energy harvesting happen at the same time?

Hello Chuck,
The energy harvesting feature in NT3H1101/1201 ICs is very simple. Depending on the RF Field strength, tag antenna size and distance to the NFC Reader, an output voltage is generated in the Vout pin to power a simple circuit or low power device with up to 2V and 10 mA.
Indeed communications and energy harvesting can happen at the same time. You might want to have a look at the connected tags demo boards, which demonstrate NFC communication and energy harvesting feature:
