I'm planning to use a differential connection made from two pairs of two twisted wires to connect two remote PCA9615 together. There would not be GND and power connection in between. Do you suggest to shield differential wires or not? It yes - where to connect a shield since there will not be GND shared between two boards? Is it okay to leave shield floating if used?

This is the connection that we recommend.
Telecom category 5 ('CAT 5') data cable is well suited for this task, but loose wires may also be used, with a reduction in performance.
So, for your question, as far as I understand, most Category 5 cables are unshielded
