Hi,
you can refer to chapter 43.5.10 Clock domains and restrictions of the RM to calculate theoretical max bit rate for given configuration (peripheral and PE clock frequencies, payload size and number of available mailboxes.).
Moreover used CAN transceiver will limit max bitrate, so check its features.
