Hey, 

I am trying to start up my sensored project while the motor is spinning. I am limited to starting up the system if the motor speed is less than 750RPM. If the speed is above 750 RPM, a overcurrent will occur on my system. I believe this is because the current regulator / speed regulator is expecting the system to start at 0 speed. Is there a way to precondition the current regulator / speed regulator to start at the current speed?

Yes, take a look at how the sensorless project handles transitioning from open-loop startup to closed-loop foc. You would need  similar procedure in your application.
