Does anyone know how to view registers and peripheral (registers)?
The register view is grayed out and the only way that I can presently see where the PC is operating is to use the disassembly view.
If views are 'grayed' it means that they are already open. There is no other meaning of this.
So you had them open, but maybe missed the view in the perspective?

I don't have a 1020 at hand, so here with the 1051 which is the same for the 1020:

Although the register view was grayed out in the Windows -> Show View -> Other-> Debug -> Registers menu I could still click on it and then both the CPU register and Peripherals appeared.
Then I closed the two windows and the Register entry in the menu was no longer grayed out so I could re-enable the register view again normally (but it didn't this time switch in the Peripherals too).
I needed to search to re-enable the peripheral view since it is in Windows -> Show View -> Other->MCUXpresso IDE -> Peripherals+ instead.
But all seems OK now.
