Hi
Look also at the uTasker stack (it includes OS, TCP/IP stack, device drivers are the uTasker simulator running a simulated NE64 in a real network). Online demo at
http://demo.uTasker.com (
the device it is running on changes and is not necessarily the NE64 but it is single.chip...)
However I also recommend you look at the equivalent Coldfire devices. (eg. M52232 - see overview here:
http://www.utasker.com/forum/index.php?topic=256.0) since they are much more powerful, have vastly better peripherals and rather more internal memory (some packages are virtually pin compatible to the NE64) - plus their development support is extremely good. They tend to be cheaper than the NE64 nowadays too so there is really no advantage fo starting a new project with the NE64.
