Is it possible to debug a project in simulator mode i.e without connecting to the target through debug probe?

No. LPCXpresso is a development tool for NXP Microcontrollers. It is not a tool for developing Host applications.

We do not provide a simulator with LPCXpresso. There is a very wide range of developments boards and debug probes available, priced from just a few dollars.
