I'm not familiar with Keil's Logic Analyzer. However, based on the information that I found, it seems that the purpose of this tool is to show a graphical analysis of value changes of variables or VTREGs. So, I think that what you are trying to do won't be possible with this tool. Unless you change a variable each time the value of the GPIO changes, this way you can observe the variable on the Logic Analyzer tool.
yes you said correct, GPIO pins assigned to variables is observed but any other option to assign direct PINS in logic analyzer,
