I am aware of the NXP OpenCV fork that incorporates eIQ for hardware accelerated neural image processing on the i.MX8m plus.
But, what about non-machine-learning image processing, such as converting between ICC profiles? Is the NXP OpenCV fork also capable of using hardware acceleration (with the GPU through OpenCL in this case I guess) for such ICC conversions, and also other operations like white point adjustments or gamma correction?

I think the answer is yes. For your information, this is the GPU guide. You could check what features we have supported. https://www.nxp.com/docs/en/user-guide/IMX_GRAPHICS_USERS_GUIDE.pdf
It is better use the EVK to check the performance.
