Richard,
the original cabling and boards were created for MPC5604B board however, the K40 Tower Kit can be used (and has been extensively used) for the Freescale Cup.
Mounting instructions for the board can be found here with examples of cars built with the K40 kit here
There are no wiring instructions as the Tower Kit requires a Proto board (available from me if needed) to make your own connections depending on the configuration you wish to use.
