In this case, the MPX2010 is ratiometric to supply voltage.
The typical supply voltage is 10 volts and the specifications as noted on the data sheet are at 10 volts supply. At 5 volts, for example, the device will operate as this is within the 0 to 16v range for the supply voltage. The only difference being the change in full scale span will be ratiometric to the change in supply voltage.
You can reduce the supply voltage and therefore, the full-scale output of the sensor will change linearly.
Theoretical supply voltage can be close to zero voltage but absolute errors would be highest then measured. I recommend using at least 2V supply because of mentioned reason.
