Yes, the MPXV7025 is available in two different types: Differential measurement (MPXV7025DP) and Gauge measurement (MPXV7025GC6U).
You can either buy direct from the NXP or through a distributor.
About your second question, I’m not sure if I completely understand it, but in all the MPXV7025 pressure sensors family, the Pressure (P1) side contains fluorosilicone gel which protects the die from harsh media.
