I want to ask what is the function of V15_MCU power supply? Because I cut off the V15_MCU power supply, the board works normally, no abnormality was found.

It is a high-current input for the core and logic supply.
Please refer to the datasheet.
Table 15. Low speed RUN mode supply currents shows power consumption with and without the last mile regulator in low-speed modes.
Table 16 and Table 17 show the consumption in high-speed modes.
In other words, the V15 (last mile regulator) must be enabled if PLL is used.

It is explained in the RM.
The internal V11 domain can be powered by the Boot regulator (from VDD_HW_A) or by the Last Mile regulator (from V15).
