SJA1110 Cut-through and store-and-forward

What's the default forward mode for SJA1110? Cut-through or store and forward?  

How do I configure the forward mode?

The SJA1110 supports only store and forward mode. See the SJA1110 Datasheet, chapter 2.1 General.
