to get 3W+ at 144 MHz using the good old "dead bug" technique on a piece of copper:
The device is characterized for operation mainly at 7.5V but can withstand 30V max, according to the datasheet.
I supply it with 12V since this is what available to me and it would be beneficial not to use any regulators. Do you foresee any problems by using the device at this higher voltage?

AFT05MS003N can be used at 12V supply. Though, you should check your design against maximum ratings of AFT05MS003N.
The main limiting factors are: maximum peak drain voltage +30V, maximum junction temperature +150'C.
Typical class AB RF power amplifier has voltage peak factor about x2. So, 12V * 2 =24V provides enough margin to 30V.
Note, some amplifier designs could provide much higher voltage peak factors:
- In the presence of RF second harmonic, the PF could be more than x2.
- Class E amplifier PF> 3.5
