I am going to design a system to acquire temperature data from multiple I2C sensors via NFC. But I cannot find a datasheet describe this kind of operation like NT3H1101. Is there any good ideas?

The I2C HW block description can be found in the HW user manual UM10876 chapter 20.
You will need to write C firmware that will configure the external sensors and read out the measurement results.
