I found that MCUXpresso SDK version of KV10Z7 series MCU stays at 2.2.0, while KV10Z1287 series continuously get support till the latest version, 2.8.0. Will KV10Z7 get SDK version 2.8.0 too? Or should I switch to KV10Z1287 series as soon as possible? Cause I found the low pin count KV10ZVLC7 really handy in some situation, and unwilling to switch to other LQFP-64 package KV10s.

KV10 low memory density product SDK will not upgrade. But you needn't switch to high momory density device. They have almost same 15 year longevity. And their structure and peripherals are almost same, except momory, FlexCAN and peripherals number. You can use KV11 SDK to develop driver and porting to KV10.
