Yes you can. Look at the "ADC# Channel Assignment for..." table in the Reference Manual of the device you are going to use.
It will have the channel number for the ADC#_DP# pin (the positive input pin of the differential channel) and note you have to set the DIFF bit to zero.
I highly recommend that you tie the DN# input to ground when you're using the DP# pin as a single channel.
