Is it possible to get access to the I2C1 SDA and CLK lines on the K60 Tower (TWR-K60F120M)?
Port Pins B50 and B51 are actually connected to I2C0.

Yes, you can access to the I2C1 SDA and CLK line on the K60 Tower.
From the K60F120M reference manual, you can get that, these pins are also I2C1 pin:
PTE0: I2C1_SDA
PTE1: I2C1_SCL
PTC10: I2C1_SCL
PTC11: I2C1_SDA
You also can check the TWR-K60F120M board, you will find the PTC10, PTC11 already be used by the NAND flash, so you cxan choose PTE0, PTE1.
But if you use the I2C1 pin as the open drain, you need to add the external pullup resistor in the PTE0, PTE1 pin.
PTE0:B22
PTE1:B11
